It has been "cured" in the sun for a day, it is not quite as bright and orange like it just came out of the ground. We have taken the loss of the initial weight loss (about 10%) from normal dehydration in the first week after harvest. It is still a fresh product and will last for at least a month if stored well ventilated at room temperature. It does not need refrigeration. We typically ship the next day, when ordering, please consider your weather for freezing temps. It will be ruined if it freezes in your mailbox.
