Mexican Chiapas is a medium-bodied coffee with a crisp finish. Bright and sweet acidity with mediumbody, spice and fruit undertones with a hint of chocolate It has a slightly nuttyflavor and is a wonderfully refreshing coffee...great for all roast profilesand a personal favorite of ours!

General Description: Mexico’s diversegeography, from the soaring altitudes of the country’s four mountain ranges tothe beautiful coastal regions along the Pacific, supports diverse farmingpractices and a broad variety of crops. Chiapas is the country’s southernmoststate, home to the Sierra Madre de Chiapas Mountain range. To its west are thecoffee growing regions of Oaxaca and Vera Cruz, but it is the beans ofGuatemala’s Huehuetenango region, directly to the east, with which Chiapascoffee shares so much character. The continued development of anetwork of Fair Trade farmers’ cooperatives is helping local people slowlyimprove their quality of life.

Flavor Profile: Slightly nutty & sweet, well-balanced with a smooth finish ; rich lingeringfinish in profile a great any time of day!

Farmers consisting of indigenous Mayanpeoples from the tribes of Tzotzil, Tzeltal, Mame, Chuj and Zoque wereconcerned about chemical inputs, soil erosion, fish and bird deaths, and theemigration of their young people seeking jobs. In addition, they wanted to improvequality and yield, and get affordable credit. So in 1992, they formed theFIECH, Coffee from the Indigenous Ecological Federation of Chiapas. Thestate of Chiapas is located in the Sierra Madre Mountains and receives theperfect combination of rainfall and sunshine to create this strictly high grownbean.

This particular fairly traded,shade grown, and bird friendly coffee is served in finer restaurants throughoutMexico. In 1996, just 4 short years after forming, the Mexican government awardedthe cooperative the National Ecological Prize for environmentalstewardship.

Roasting Notes: Medium bodywith mild acidity and balanced, with delicate fruit and spice overtones.A hard bean that takes a dark roast well. I would use this coffee inFrench or Italian roasts but also cups well in the City - Full City range.Chiapas, the tropical jungle that is the most southern eastern part of Mexico,borders with Guatemala. Chiapas is the coffee little brother of Guatemala\'s HueHue Tenango region, and this comes through in the cup. The Chiapias coffees arebrighter, sweeter, with a definite clove spice to compliment the apricot fruitthat is in the cup.

This coffee isproduced in the state of Chiapas,mainly in the Soconusco region.Allthe coffee is grown at an altitude between 900 and 1,100 metersabove sealevel and we make sure that our clients are delivered a trueHigh Grown EPcoffee with the respective cup profile. This coffeeis a perfect combination ofboth.The normal harvest season starts in December and ends in April.Aftera careful quality test, all the coffee is milled in a certified drymill inTapachula, Chiapas. This coffee is allowed less than 15imperfectionsper 300 grams. The coffee is exported January throughSeptember.
